Baked Sweet Potato “Chips”

So easy, so good. Great way to get super-healthy sweet potatoes into your diet on a weeknight. And kids love these too!

 

Sweet Potato “Chips”

2 large sweet potatoes, scrubbed clean

olive oil

sea salt

fresh ground black pepper

1) Preheat oven to 450 degrees.

2) Slice sweet potatoes into thin slices (either across, like chips, or lengthwise like fries). Place on baking sheet in a single layer and drizzle with a little olive oil. Sprinkle with sea salt and fresh ground pepper.

3) Bake about 15 minutes or so, or until cooked through and golden (if you like a crispier “chip,” you can cook them a bit longer until they are more browned).

Want to get fancy? Next time try making them with your favorite spices (fresh garlic or garlic powder, fresh or dried rosemary, sage, or thyme).
