Last weekend I was invited to present my annual “eating for energy” workshop at one of my favorite New York City running groups, Galloway NYC. We discussed everything from how to avoid the typical mid-day energy crash to how to keep energy levels optimal for exercise to what makes the best on-the-go snacks.
But of everything I reviewed during this workshop, there’s one recommendation I gave that isn’t very “sexy,” or revolutionary, or brand new – but one that I believe likely has the biggest impact of all when it comes to good health, optimal energy levels, and vibrant wellbeing: Vegetables!
You probably aren’t shocked to hear a nutrition coach touting the benefits of eating veggies. But you may be surprised to know just how powerful vegetables can be when it comes to keeping us in balance, skyrocketing energy levels, and even in reducing cancer rates.

Wowza, right?!! That’s pretty impressive “medicine” at the end of your fork!
OK, so we all know that eating vegetables is good for us, but many clients come to us finding it challenging to get in the recommended 10 servings per day.
Clearly, we have a major nutrient shortage going on in our diets.
But there is good news in all of those scary numbers. Ultimately, we are in control, and we have a choice: as Dr David Katz said, “.”
Choose to eat more vegetables and fruits whenever and however you can. Know that each veggie you’re putting into your body is having a positive impact on your health.
Reach for more, whole, real, “honest” foods and reduce processed, packaged foods. Make your grocery store your pharmacy. To quote Dr Mark Hyman, “What’s at the tip of your fork is more powerful than what’s at the bottom of your pill bottle“.
