Don’t know what to do with that container of plain brown rice that came with your takeout last night? Turn it into breakfast! You can easily take any leftover, plain unseasoned grain and make it into a hearty, warming breakfast cereal. Simply warm it up with a little milk (dairy or non) and sprinkle with some of my favorite toppings:
-Unsweetened coconut flakes
-Chopped, raw (unroasted) nuts such as almonds, walnuts or pecans
-Unsulfered, unsweetened dried fruits like blueberries, chopped apricots, or dates
-A touch of maple syrup or honey
-Ground flax seeds or whole hemp seeds
-A tablespoon of nut butter
-Raw cacao nibs (cocoa bean pieces)
-A sprinking of ground cinnamon
Like steel cut oats but don’t have 30 minutes in the morning to cook them? Try this amazing trick: simply boil the premeasured water for the oats the night before, adding in any tasty additions like vanilla extract, cinnamon, or dried fruits to the cooking water. When the water reaches a boil, stir in your measured amount of oats, turn off the heat and cover. Go to sleep. The next morning, voila! Your oats are all cooked and ready to go! Just reheat for a couple of minutes and add your desired toppings. Delicious, healthy grain nutrition in under 10 minutes.
