"Feel-Good Mondays" are meant to help us get back into that place of feeling energized, nourished, and ready to take inspired action for the week ahead.
Over the past couple of week weeks, I was invited to present “eating for energy” workshops at two large organizations (Plated and the Galloway NYC Running Club!). We discussed everything from how to avoid the typical mid-day energy crash to how to keep energy levels optimal for exercise to what makes the best on-the-go snacks.
But of everything I reviewed during these workshops, there’s one recommendation I gave that isn’t very “sexy,” or revolutionary, or brand new – but one that I believe likely has the biggest impact of all when it comes to good health, optimal energy levels, and vibrant wellbeing: Vegetables!
You probably aren’t shocked to hear a nutrition coach touting the benefits of eating veggies. But you may be surprised to know just how powerful vegetables can be when it comes to keeping us in balance, skyrocketing energy levels, and even in reducing cancer rates.
Are you ready for some mind-blowing facts?!
1. Eating about 1 cup of mushrooms per day can reduce your risk of breast cancer by 64%!! 2. One onion a day reduces the risks of the following cancers: – 56% reduction in colon cancer – 73% reduction in ovarian cancer
– 71% reduction in prostate cancer – 50% reduction in stomach cancer 3. Eating green veggies (kale, bok choy, broccoli, collard greens, etc) on a daily basis can cut your risk of cancer in half. |
Wowza, right?!! That’s pretty impressive “medicine” at the end of your fork!
OK, so we all know that eating vegetables is good for us, but many clients come to us finding it challenging to get in the recommended 10 servings per day.
It’s estimated that only 1.5% of the American population actually eats the recommended daily amount of fruits and vegetables. What’s more, the average American consumes 62% of their calories from processed foods.
Clearly, we have a major nutrient shortage going on in our diets.
So it’s no wonder that by 2020, it’s estimated half of our population will be suffering from a chronic disease.
But there is good news in all of those scary numbers. Ultimately, we are in control, and we have a choice: as Dr David Katz said, “The fork is the master of your destiny.”
Choose to eat more vegetables and fruits whenever and however you can. Know that each veggie you’re putting into your body is having a positive impact on your health.
Reach for more, whole, real, “honest” foods and reduce processed, packaged foods. Make your grocery store your pharmacy. To quote Dr Mark Hyman, “What’s at the tip of your fork is more powerful than what’s at the bottom of your pill bottle“.
