Get ready for two very special treats in today’s Feel-Good Monday: A video that showcases my 9-month baby belly (!) AND my favorite cookie recipe 😉 In today’s video (shot in my Brooklyn garden), I highlight why this recipe for Chocolate Chip Oatmeal “Energy” Cookies (adapted from the amazing blog 101cookbooks.com) is truly one of my favorite go-to’s. I’ve made this recipe for running groups, office workers, clients, and it’s a total household staple. Since I’m due on June 2, I decided to make and freeze a batch of these for an easy source of convenient, delicious energy once our baby boy arrives. WHOOPS: In the video, in all of my excitement, I totally forgot to mention that these cookies contain almond flour – a fantastic source of healthy fat and protein that is one of the main “energizing” ingredients. Lately I’ve really been into the super finely ground almond flour that the folks at Wellbee are making.
