We’re All Going Bananas!

Have you heard? Banana bread is THE baked good of the Covid19 pandemic! Ovens across the world are baking away, filled with loaves of fresh banana bread (and, honestly, everything banana – from banana cookies to banana muffins to roasted bananas).

When I heard the news about the new banana craze, it wasn’t all that surprising to me. There hasn’t been one week during NY’s lockdown that I didn’t have a bunch of bananas (or three) ripening on our counter.

It was one of the first foods I stocked up on when I was preparing to stay at home, because bananas are so very useful, versatile, and tasty to have around during any baking or snacking spree!

Whipping up a batch of banana oatmeal muffins has been one of my favorite weekly bonding activities with Rye, and we all sit down for “family snack” in the afternoon and joyously wolf these down.

Here’s all the things we’re doing with bananas at our house:

Perfectly Ripe Bananas:

  • Snack Time: Slice a banana in half the long way, spread a little nut butter on the halves, and sprinkle on some coconut flakes for a delicious, hearty, kid-friendly, 2-minute snack.

  • Banana Soft-Serve: Here’s my favorite, easy recipe to make this “ice cream” treat at home. This is one of our family’s favorites. Top with your favorite toppings (my husband and kiddo love chocolate chips, while I’m partial to a drizzle of peanut butter on top of mine).

  • Smoothies: Bananas add an irresistible sweet creaminess to smoothies. You can throw a banana into any smoothie you’re making, but I particularly enjoy banana-date-nut butter smoothies (1 frozen banana, 1 cup of coconut milk or almond milk, 2 tbsp of any kind of nut butter, 3 pitted dates. Blend until creamy, serves 2.)

Super Ripe Bananas:

  • Banana Oatmeal Muffins: A dear friend introduced me to this Cookie + Kate muffin recipe and we’ve become OBSESSED with it (I literally make 2 batches a week, every week!). We sub in Bob’s Red Mill Paleo Flour for the whole wheat flour, bake these as mini muffins, and always add a cup of chocolate chips to the batter.
