Cinnamon-Spiced Baked Apples

CinnamonSpiced Baked Apples

Ingredients: 

6 sweet apples, peeled and sliced into 1/4 – 1/2 inch thick slices
3 tablespoons melted coconut oil **
2 teaspoons cinnamon

1/2 tsp of ground vanilla bean, or 1 tsp vanilla extract
Freshly ground nutmeg
3/4 teaspoon sea salt

 

Directions: 

Preheat oven to 375 degrees.

Toss apple slices with melted coconut oil, cinnamon, vanilla, nutmeg, and sea salt in a large bowl until well coated.

Spread in a thin layer on a baking sheet lined with unbleached parchment paper.

Place in the oven and bake for 15 minutes. Take out, stir, spread evenly, and return to the oven.

Bake for another 15 minutes and stir again.

Return to the oven for another 10 minutes, until apples are tender.

Enjoy warm, straight out the oven! Store the leftovers in the fridge in a tightly sealed container and warm before serving.
 

  ** Note: Bring apples to room temperature before tossing with the melted coconut oil. Otherwise, the coconut oil will congeal and be hard to spread. If you have to use cold apples, no worries: simply toss everything the best you can, spread onto your parchment-lined baking sheet, and place into the pre-heated oven for a couple of minutes (this will get the coconut oil to melt and become spreadable). Take the sheet out of the oven, toss well (I often use my hands), then place back in the oven to bake. **
