What’s filling my fridge, pantry, and freezer right now!

"Feel-Good Mondays" are meant to help us get back into that place of feeling energized, nourished, and ready to take inspired action for the week ahead.

 

Last week I had the pleasure of doing an Instagram Live chat with my San Francisco-based friend, wellness entrepreneur Marguerite Imbert (@margueriteimbert)!

We talked about what my fridge/pantry/freezer is stuffed with right now to get me and my family through these long, all-meals-at-home-all-the-time days in good health (and good taste!).

Here’s my list of stock-up staples that have been getting us through:

  1. Bananas: I always have a bunch of these on hand because they’re so versatile! I use them for quick snacking (cut one open, spread on some nut butter), baking (when they’re starting to go brown, we use them for healthy banana bread or my personal favorite – banana oatmeal cookies!), and freeze super ripe bananas for smoothies or banana soft serve (my 4-year old’s fave dessert).
  2. Siete Tortillas: High-protein choice for wraps, open-face grilled cheese “sandwiches,” and another kiddie favorite: simply warm up a tortilla and spread on a little butter/drizzle with a touch of honey.
  3. Oatly Oat Milk: Oh, how I love Oatly! I use their “barista” version for the creamiest matcha lattes, cappuccinos, or cereal mixer. Bonus points for being shelf stable, making this a stock-up pantry MUST in our home.
  4. Modern Table or Explore Cuisine Red Lentil Pastas: We’re all eating pasta. LOTS of pasta. Swap out refined-flour pastas for these high-protein, delicious, red lentil versions! I’ve tried a lot of bean pastas in my day, and these two brands are my current favorites for flavor/texture/kid-approval.
  5. Frozen Cauliflower “Rice”: Quick, easy veggie side dish that goes with almost anything. I top this “rice” with beans, roasted meats, eggs, or guacamole.
  6. Pacific Boxed Bone Broth or Bonafide Frozen Bone Broth: Bone broth is a magical elixir. Use this nutrient-packed stock for everything from a soup base, to braise greens, or simply to sip on for healthy (and filling) hydration.
  7. Rao’s Marinara Tomato Sauce: This is simply the best jarred tomato sauce around! We use it to top our red lentil pasta, in my paleo “hamburger helper” recipe, and as the tomato sauce-base for our weekly cauliflower pizza night.
  8. Canned Organic Full Fat Coconut Milk: I am always reaching for this creamy, shelf-stable, dairy-free milk to add creaminess and healthy fat to my soups and smoothies.
  9. Eggs: Healthy, easy, quick-cooking protein for breakfast, lunches, and dinners. Fry them, frittata-them, or scramble them and serve alongside a veggie and voila! Meal on the table in 5 minutes.
  10. Long-Lasting Veggies: Sweet potatoes, carrots, winter squash, and beets have been filling my basement. They stay fresh for a long time, which means less shopping trips required.
  11. Alyssa’s Oatmeal Cookies: We all need some cookies in our lives right about now, right? I LOVE these gluten-free, fruit-sweetened treats for a healthier dessert, snack, or occasionally….as breakfast!
  12. Simple Mills Baking Mixes: We’re all staying home. We’re all baking. My family loves these healthier, lower-sugar, gluten-free mixes when the baking urge strikes. Which, these days, is often.
